5 Minute Breakfast Egg Sandwich

I recently discovered 90 second bread and it has been a game changer for me. Not only is it super fast to make but it happens to be low carb and grain free. It’s even suitable for anyone on a LCHF, ketogenic or paleo diet. Try it and let me know what you think!

Ingredients

For the Bread
  • 3 tablespoons almond flour
  • ½ teaspoon baking powder
  • 1 extra large egg
  • 1 tablespoon melted butter
For the Sandwich
  • 1 egg (I like mine over easy)
  • 1 strip of bacon cut in half
  • 1 slice of cheese cut in half
  • 1 slice of tomato
  • A few spinach leaves
  • Salt & pepper

Directions

To make 90 second bread, microwave 1 tablespoon of butter for 10 - 15 seconds or until melted. In a microwavable mug, combine almond flour and baking powder and mix well. Add egg and melted butter and mix until clumps are gone. Mixture should be smooth. </p>

Nuke in the microwave for 90 seconds. When it’s done it should easily pull away from the walls of the mug. Pop it out and cut into 4 equal slices. Add cheese, egg, bacon, tomato, spinach, salt and pepper.
